Ingredients:
- 1.5 lbs chicken breast, cut into 1-inch cubes
- 0.75 cup orange marmalade
- 3 tbsp soy sauce
- 4 cloves fresh garlic, minced
- 2 tbsp neutral oil
Instructions:
- Pat the chicken cubes dry with a paper towel. Heat 2 tablespoons of neutral oil in a large non-stick skillet over medium-high heat until shimmering.
- Add the chicken in a single layer. Let sit undisturbed for 3 minutes to develop a golden-brown crust, then continue cooking and tossing until opaque and firm, approximately 6-8 minutes total.
- Push the chicken to the outer edges of the skillet to create a well in the center. Add the minced garlic and sauté for 30-45 seconds until fragrant but not browned.
- Pour the orange marmalade and soy sauce over the chicken and garlic. Stir vigorously as the heat melts the marmalade into a thick, tacky glaze that coats the chicken.
