Ingredients:

  • 3 Large overripe Bananas (approx. 1.5 cups mashed)
  • 1 box (15.25 oz) Yellow Cake Mix
  • 2 Large Eggs

Instructions:

  1. Preheat your oven to 350°F.
  2. Peel and mash 3 Large overripe Bananas in a large bowl. Mash until the texture is mostly smooth with a few small chunks.
  3. Add 2 Large Eggs to the banana mash. Whisk them in until the mixture looks pale yellow and slightly frothy.
  4. Pour in the 1 box (15.25 oz) Yellow Cake Mix. Do this gradually to avoid a flour cloud in your face.
  5. Fold the mixture gently using a spatula. Stop until no dry streaks of mix remain.
  6. Line a 12 cup muffin tin with paper liners.
  7. Divide the batter evenly among the cups. They should be about three quarters full.
  8. Bake for 20 minutes. Watch until the tops are golden and a toothpick comes out clean.
  9. Cool in the pan for 5 minutes.
  10. Transfer to a wire rack. Let them finish cooling until the bottoms no longer feel warm to the touch.
