Ingredients:

  • 1.5 lbs Yukon Gold potatoes, cut into 3/4-inch cubes
  • 12 oz Smoked Sausage or Kielbasa, sliced into 1/2-inch rounds
  • 1 large bell pepper, chopped into 1-inch pieces
  • 0.5 large yellow onion, sliced into thick wedges
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp dried oregano
  • 0.5 tsp sea salt
  • 0.25 tsp cracked black pepper

Instructions:

  1. Cube the potatoes into uniform 3/4-inch pieces. Soak in cold water for 10 minutes to remove starch, then pat completely dry with a lint-free towel to ensure maximum crispiness.
  2. In a large mixing bowl, whisk together the olive oil, garlic powder, smoked paprika, dried oregano, salt, and black pepper.
  3. Toss the dried potato cubes in the seasoning oil first until well-coated, then add the sliced sausage, bell peppers, and onions, tossing again to distribute spices.
  4. Preheat the air fryer to 400°F (200°C). Spread the mixture in the air fryer basket in a single layer (cook in batches if necessary).
  5. Air fry for 18-20 minutes, shaking the basket vigorously every 6-7 minutes to ensure even browning and crisping.
