- 12 oz Smoked Sausage or Kielbasa, sliced into 1/2-inch rounds
- 1 large bell pepper, chopped into 1-inch pieces
- 0.5 large yellow onion, sliced into thick wedges
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 0.5 tsp dried oregano
- 0.5 tsp sea salt
- 0.25 tsp cracked black pepper
Instructions:
- Cube the potatoes into uniform 3/4-inch pieces. Soak in cold water for 10 minutes to remove starch, then pat completely dry with a lint-free towel to ensure maximum crispiness.
- In a large mixing bowl, whisk together the olive oil, garlic powder, smoked paprika, dried oregano, salt, and black pepper.
- Toss the dried potato cubes in the seasoning oil first until well-coated, then add the sliced sausage, bell peppers, and onions, tossing again to distribute spices.
- Preheat the air fryer to 400°F (200°C). Spread the mixture in the air fryer basket in a single layer (cook in batches if necessary).
- Air fry for 18-20 minutes, shaking the basket vigorously every 6-7 minutes to ensure even browning and crisping.
