Ingredients:
- 2 Salmon fillets (6 oz each)
- 1 tsp Olive oil
- 1 tsp Lemon zest
- 1/2 tsp Garlic powder
- 1/4 tsp Sea salt
- 1/4 tsp black pepper
- 1/2 tsp dried oregano (or thyme)
- fresh lemon wedges
- 1 tbsp finely chopped fresh parsley
Instructions:
- Dry the fillets. Pat the 2 center cut salmon fillets with a paper towel until the surface is completely matte. Note: Moisture is the enemy of a good crust.
- Apply the oil. Drizzle 1 tsp extra virgin olive oil over the flesh side of the salmon and rub it in with your fingers.
- Mix the aromatics. Combine 1 tsp lemon zest, 1/2 tsp garlic powder, 1/2 tsp dried oregano (or thyme), 1/4 tsp sea salt, and 1/4 tsp black pepper.
- Season the fish. Press the herb mixture firmly into the oiled salmon so it adheres well.
- Preheat the fryer. Set your air fryer to 400°F and let it run for 3 minutes. Note: A hot basket prevents sticking.
- Arrange the fillets. Place the salmon in the basket, skin side down, leaving space between the two pieces.
- Air fry. Cook for 8 to 10 minutes until the surface is golden and the middle flakes easily.
- Check temp. Use a thermometer to hit 125°F for a medium finish.
- Rest the meat. Remove the basket and let the salmon sit for 3 minutes. Note: This allows the juices to redistribute.
- Final garnish. Squeeze fresh lemon wedges over the top and sprinkle with 1 tbsp finely chopped fresh parsley.
