Ingredients:
- 2 cups (300g) peeled and finely diced Honeycrisp or Fuji apples
- 2 tbsp (28g) unsalted butter
- 1/4 cup (50g) light brown sugar, packed
- 1 tsp (2g) ground cinnamon
- 1 tsp (5ml) lemon juice
- 1 pinch (1g) salt
- 1/2 cup (45g) old-fashioned rolled oats
- 1/4 cup (30g) all-purpose flour
- 3 tbsp (42g) unsalted butter, melted
- 2 tbsp (25g) brown sugar
- 1/4 tsp (1g) salt
- 2 cups (480ml) heavy cream, chilled
- 1 cup (240ml) whole milk, chilled
- 3/4 cup (150g) granulated sugar
- 1 tbsp (15ml) vanilla extract
- 1/2 tsp (1g) ground cinnamon
- 1 pinch (1g) salt
Instructions:
- Sauté the diced apples in butter over medium heat until softened. Stir in the brown sugar, cinnamon, lemon juice, and salt.
- Simmer the apple mixture for 8–10 minutes until the liquid reduces into a thick, glossy syrup that coats the apples. Transfer to a bowl and refrigerate until completely cold.
- Preheat oven to 350°F (175°C). Mix oats, flour, brown sugar, and salt in a bowl, then stir in melted butter until clumpy.
- Spread the crumble mixture onto a baking sheet and bake for 8–12 minutes, stirring halfway through, until mahogany-colored and fragrant. Let cool completely.
- Whisk together the milk, sugar, cinnamon, and salt until the sugar is fully dissolved. Stir in the heavy cream and vanilla extract.
- Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
- Transfer the churned ice cream into a chilled container. Gently swirl in the cold apple compote and fold in the toasted oat crumble using a spatula, aiming for a marbled effect.
- Freeze for at least 4 hours to firm up.
