Ingredients:
- 1.5 kg Granny Smith apples, peeled, cored, and diced into 1/2-inch cubes
- 400g yellow onions, finely diced
- 50g fresh ginger, peeled and finely grated
- 3 cloves garlic, minced
- 500ml apple cider vinegar (5% acidity)
- 450g dark brown sugar, packed
- 250g golden raisins
- 1 tablespoon yellow mustard seeds
- 1 whole cinnamon stick
- 0.5 teaspoon ground cloves
- 0.5 teaspoon cayenne pepper
- 1 teaspoon sea salt
Instructions:
- Place the diced onions into a large heavy-bottomed pot with a small amount of oil. Sauté over medium heat for 5 minutes until the onions are translucent and soft.
- Stir in the grated ginger and minced garlic. Cook for 1 minute until fragrant and pungent.
- Add the diced apples, raisins, apple cider vinegar, dark brown sugar, mustard seeds, cinnamon stick, ground cloves, cayenne pepper, and sea salt to the pot.
- Stir the mixture well until the sugar has completely dissolved. Bring to a brisk boil.
- Immediately reduce the heat to low and let it simmer uncovered for approximately 45 minutes, stirring occasionally to prevent sticking, until the mixture is thick, syrupy, and the apples are tender.
- Remove the cinnamon stick before transferring to sterilized jars for storage or serving.
