Ingredients:

  • 3 cups (680g) cooked chicken, shredded or cubed
  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (120ml) sour cream
  • 1 can (10.5 oz / 298g) cream of chicken soup
  • 1/2 cup (115g) mayonnaise
  • 1 tsp (5g) garlic powder
  • 1/2 tsp (3g) onion powder
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper
  • 1 cup (60g) crushed Ritz crackers
  • 4 tbsp (57g) unsalted butter, melted
  • 1/2 cup (50g) grated Parmesan cheese

Instructions:

  1. In a large bowl, beat the softened cream cheese until smooth.
  2. Whisk in the sour cream, cream of chicken soup, mayonnaise, garlic powder, onion powder, salt, and black pepper until the mixture is a uniform, pale gold color.
  3. Fold in the cooked chicken gently until every piece is coated in the sauce.
  4. Transfer the chicken mixture into a 9x13 inch baking dish, smoothing the top with a spatula to remove air pockets.
  5. In a small bowl, combine the crushed crackers, melted butter, and grated Parmesan cheese.
  6. Sprinkle the cracker mixture evenly across the top of the chicken, pressing lightly so the topping adheres.
  7. Place in a preheated oven at 350°F (175°C) and bake for 25 to 30 minutes until the edges are bubbling and the topping is deep mahogany-colored.
