Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup butterscotch chips
  • 3/4 cup toffee bits

Instructions:

  1. Cream the softened butter and brown sugar until the mixture looks like pale sand and feels fluffy.
  2. Beat in the egg and vanilla extract until fully emulsified.
  3. Sift in the flour, baking soda, and salt. Mix on low speed just until the white streaks of flour disappear.
  4. Fold in the butterscotch chips and toffee bits by hand using a spatula to avoid over-mixing the gluten.
  5. Press the dough evenly into a parchment-lined 9x13 inch baking pan.
  6. Bake at 350°F (175°C) until the edges are a deep golden brown and the center has a slight give when pressed.
