Ingredients:
- 4 large (10-inch / 25cm) flour tortillas
- 2 cups (225g) freshly shredded sharp cheddar cheese
- 2 tbsp (28g) unsalted butter
Instructions:
- Lay the flour tortillas flat on a clean surface.
- Distribute the shredded cheddar cheese evenly across one half of each tortilla, leaving a small half inch border around the edge. Note: This border stops cheese from leaking into the pan.
- Heat the butter in a large non stick skillet or cast iron pan over medium heat until it foams.
- Place one tortilla in the pan and fold the empty half over the cheese.
- Press down gently with a spatula to ensure the cheese makes direct contact with the heat.
- Cook for 2-3 minutes per side until the exterior is mahogany colored and the cheese is fully melted.
- Slide the quesadilla onto a cutting board.
- Let it rest for 60 seconds to allow the cheese to set.
- Slice into three equal wedges using a pizza cutter or sharp knife.
