Ingredients:

  • 4 large (10-inch / 25cm) flour tortillas
  • 2 cups (225g) freshly shredded sharp cheddar cheese
  • 2 tbsp (28g) unsalted butter

Instructions:

  1. Lay the flour tortillas flat on a clean surface.
  2. Distribute the shredded cheddar cheese evenly across one half of each tortilla, leaving a small half inch border around the edge. Note: This border stops cheese from leaking into the pan.
  3. Heat the butter in a large non stick skillet or cast iron pan over medium heat until it foams.
  4. Place one tortilla in the pan and fold the empty half over the cheese.
  5. Press down gently with a spatula to ensure the cheese makes direct contact with the heat.
  6. Cook for 2-3 minutes per side until the exterior is mahogany colored and the cheese is fully melted.
  7. Slide the quesadilla onto a cutting board.
  8. Let it rest for 60 seconds to allow the cheese to set.
  9. Slice into three equal wedges using a pizza cutter or sharp knife.
