Ingredients:
- 4 tbsp (57g) unsalted butter
- 4 tbsp (32g) all-purpose flour
- ½ tsp (3g) salt
- 2 cups (480ml) whole milk, room temperature
- 8 oz (225g) sharp cheddar cheese, freshly grated
- ¼ tsp (1g) garlic powder
- ⅛ tsp (0.5g) smoked paprika
Instructions:
- Melt the butter over medium heat. Once it begins to foam, whisk in the flour and salt. Stir constantly for about 1–2 minutes until the mixture smells nutty and looks like a pale, golden paste. Do not let it brown.
- Slowly pour in the milk, one splash at a time, whisking vigorously between each addition. Keep whisking until all the milk is incorporated and the sauce is smooth. Increase heat slightly and simmer for 3–5 minutes until it thickens enough to coat the back of a spoon.
- Remove the pan from the heat entirely. Stir in the garlic powder and paprika, then fold in the freshly grated cheddar one handful at a time. Stir gently until the cheese is completely melted and the sauce is glossy and velvety.
