Ingredients:

  • 450g frozen tater tots
  • 0.5 tsp smoked paprika
  • 0.25 tsp garlic powder
  • 450g 80/20 ground beef
  • 2 tbsp water
  • 1 tbsp taco seasoning
  • 0.5 tsp chili powder
  • 4 large flour tortillas
  • 240ml warm nacho cheese sauce
  • 120ml thick sour cream
  • 100g shredded sharp cheddar cheese

Instructions:

  1. Preheat oven to 425°F (220°C). Toss frozen tater tots with smoked paprika and garlic powder on a baking sheet.
  2. Bake the tater tots for 15-20 minutes until they achieve a deep golden, shattering exterior.
  3. While potatoes bake, brown the ground beef in a heavy-bottomed skillet over medium-high heat, breaking it into fine crumbles.
  4. Drain the excess fat from the skillet. Add taco seasoning, chili powder, and water. Simmer for 2-3 minutes until the liquid reduces and coats the beef.
  5. Warm the flour tortillas. Spread 1/4 cup of nacho cheese and 2 tablespoons of sour cream onto each tortilla.
  6. Layer the seasoned beef, crispy tater tots, and shredded cheddar cheese onto the tortillas.
  7. Fold and roll the burritos tightly. Place them seam-side down in a dry skillet over medium heat for 1-2 minutes per side until the exterior is toasted and glassy.
