Ingredients:
- 1 lb lean ground beef
- 1 tbsp olive oil
- 2 tbsp taco seasoning
- 1/4 cup water
- 12 oz corn tortilla chips
- 2 cups shredded Monterey Jack or Sharp Cheddar cheese
- 1/2 cup diced tomato
- 1/4 cup sliced pickled jalapeños
- 1/4 cup sour cream
- 2 tbsp chopped fresh cilantro
Instructions:
- Heat the olive oil in a skillet over medium high heat. Add the ground beef and cook, breaking it apart with a spatula, until it reaches a mahogany colored sear and no pink remains. Drain any excess liquid.
- Stir in the taco seasoning and water, simmering for 2-3 minutes until the sauce is velvety and clings to the meat.
- Line a baking sheet with parchment paper. Spread half of the tortilla chips in an even layer.
- Top the first layer with half of the seasoned beef and half of the shredded cheese.
- Spread the remaining tortilla chips over the first layer.
- Top with the rest of the seasoned beef and the remaining cheese.
- Bake in the oven at 400°F (200°C) for 5-8 minutes until the cheese is bubbly and slightly golden around the edges.
- Remove from oven and immediately scatter diced tomatoes and pickled jalapeños over the top.
- Finish with dollops of sour cream and a sprinkle of fresh cilantro.
