Ingredients:

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 2 tbsp taco seasoning
  • 1/4 cup water
  • 12 oz corn tortilla chips
  • 2 cups shredded Monterey Jack or Sharp Cheddar cheese
  • 1/2 cup diced tomato
  • 1/4 cup sliced pickled jalapeños
  • 1/4 cup sour cream
  • 2 tbsp chopped fresh cilantro

Instructions:

  1. Heat the olive oil in a skillet over medium high heat. Add the ground beef and cook, breaking it apart with a spatula, until it reaches a mahogany colored sear and no pink remains. Drain any excess liquid.
  2. Stir in the taco seasoning and water, simmering for 2-3 minutes until the sauce is velvety and clings to the meat.
  3. Line a baking sheet with parchment paper. Spread half of the tortilla chips in an even layer.
  4. Top the first layer with half of the seasoned beef and half of the shredded cheese.
  5. Spread the remaining tortilla chips over the first layer.
  6. Top with the rest of the seasoned beef and the remaining cheese.
  7. Bake in the oven at 400°F (200°C) for 5-8 minutes until the cheese is bubbly and slightly golden around the edges.
  8. Remove from oven and immediately scatter diced tomatoes and pickled jalapeños over the top.
  9. Finish with dollops of sour cream and a sprinkle of fresh cilantro.
