Ingredients:
- 450g bread flour
- 350ml warm water (105°F)
- 7g instant yeast
- 10g fine sea salt
- 21g honey
- 125g dried cranberries
- 100g chopped walnuts
- 1 tbsp orange zest
- 0.5 tsp ground cinnamon
Instructions:
- In a large mixing bowl, whisk together the bread flour, instant yeast, fine sea salt, and optional cinnamon.
- In a small bowl, pre-hydrate the dried cranberries by soaking them in 2 tablespoons of warm water or orange juice for 10 minutes; drain any excess liquid.
- Create a well in the dry ingredients. Add the warm water, honey, soaked cranberries, toasted walnuts, and orange zest. Mix until a shaggy dough forms.
- Cover the bowl and allow the dough to rise at room temperature for approximately 1 hour 30 mins, or until doubled in size.
- Place a Dutch oven inside the oven and preheat to 400°F (200°C) during the final 30 minutes of rising.
- Transfer the dough onto parchment paper, shaping it lightly with a bench scraper. Carefully lower the parchment and dough into the preheated Dutch oven.
- Bake covered for 30 minutes to capture steam, then remove the lid and bake for an additional 15 minutes until the crust is mahogany-brown.
