Ingredients:

  • 450g bread flour
  • 350ml warm water (105°F)
  • 7g instant yeast
  • 10g fine sea salt
  • 21g honey
  • 125g dried cranberries
  • 100g chopped walnuts
  • 1 tbsp orange zest
  • 0.5 tsp ground cinnamon

Instructions:

  1. In a large mixing bowl, whisk together the bread flour, instant yeast, fine sea salt, and optional cinnamon.
  2. In a small bowl, pre-hydrate the dried cranberries by soaking them in 2 tablespoons of warm water or orange juice for 10 minutes; drain any excess liquid.
  3. Create a well in the dry ingredients. Add the warm water, honey, soaked cranberries, toasted walnuts, and orange zest. Mix until a shaggy dough forms.
  4. Cover the bowl and allow the dough to rise at room temperature for approximately 1 hour 30 mins, or until doubled in size.
  5. Place a Dutch oven inside the oven and preheat to 400°F (200°C) during the final 30 minutes of rising.
  6. Transfer the dough onto parchment paper, shaping it lightly with a bench scraper. Carefully lower the parchment and dough into the preheated Dutch oven.
  7. Bake covered for 30 minutes to capture steam, then remove the lid and bake for an additional 15 minutes until the crust is mahogany-brown.
