Ingredients:

  • 8 oz cream cheese, softened
  • 2 tbsp mayonnaise
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh dill, finely chopped
  • 1/4 tsp salt
  • 1/8 tsp cracked black pepper
  • 1 medium English cucumber
  • 8 slices white or whole wheat bread
  • 2 tbsp unsalted butter, softened

Instructions:

  1. Slice the English cucumber into rounds approximately 1/8 inch thick. Lay the slices in a single layer on paper towels, sprinkle with a pinch of salt, let sit for 5 minutes, then pat the tops dry.
  2. In a medium bowl, combine the softened cream cheese, mayonnaise, and lemon juice. Whip the mixture until light and fluffy using a spatula or hand mixer.
  3. Fold the chopped dill, salt, and pepper into the cream cheese mixture until evenly distributed.
  4. Lightly butter one side of each bread slice. Apply a generous, edge-to-edge layer of the cream cheese spread.
  5. Layer the dried cucumber slices over the spread, overlapping them slightly. Top with a second slice of bread and press down gently.
  6. Trim the crusts using a serrated knife and cut into triangles or fingers.
