Instructions:

  1. Pat the chicken breast chunks completely dry with paper towels to ensure maximum crispiness. Season the raw chunks evenly with kosher salt, black pepper, and garlic powder.
  2. Organize a dredging station with three shallow bowls. Place the all-purpose flour in the first bowl. In the second, whisk the eggs with 1 tablespoon of water. In the third, combine the panko breadcrumbs with smoked paprika and onion powder.
  3. Coat each chicken piece in flour and shake off the excess. Dip into the egg wash, then press firmly into the panko mixture, ensuring a thick, even coating on all sides.
  4. Preheat your air fryer to 400°F (200°C) for 3 minutes.
  5. Arrange the breaded nuggets in the air fryer basket in a single layer, leaving space between each piece. Lightly spritz the tops with avocado oil spray.
