Ingredients:
- 1 can (15 oz / 425g) chickpeas, drained, rinsed, and patted dry
- 2 tbsp (30ml) extra virgin olive oil
- 1 tsp (2g) smoked paprika
- 1 tsp (2g) ground cumin
- 1/2 tsp (3g) garlic powder
- 1/2 tsp (3g) sea salt
- 1 cup (185g) long-grain brown rice
- 2 cups (480ml) water
- 1/2 tsp (3g) salt
- 1 tbsp (15ml) fresh lemon juice
- 1 cup (150g) cherry tomatoes, halved
- 1 medium (120g) English cucumber, diced
- 1/4 cup (35g) red onion, thinly sliced
- 2 cups (60g) fresh baby spinach
- 1/4 cup (30g) fresh parsley, chopped
- 3 tbsp (45ml) tahini
- 2 tbsp (30ml) lemon juice
- 1 tbsp (15ml) maple syrup
- 2 tbsp (30ml) warm water
- 1 clove (5g) garlic, minced
Instructions:
- Combine rice, water, and salt in a pot. Bring to a boil, then reduce heat to low, cover, and simmer until tender (approximately 40 minutes).
- Once the rice is cooked, fluff with a fork and stir in 1 tablespoon of lemon juice.
- Pat the drained chickpeas completely dry using a clean kitchen towel.
- Heat olive oil in a skillet over medium-high heat. Add chickpeas and sauté for 8–10 minutes, shaking the pan occasionally, until the skins are mahogany-colored.
- Stir in the smoked paprika, cumin, garlic powder, and salt. Cook for 1 additional minute until fragrant.
- In a small jar or bowl, whisk together tahini, lemon juice, maple syrup, minced garlic, and warm water until emulsified.
- Divide fresh baby spinach evenly among four bowls.
- Scoop a portion of lemon rice next to the greens and arrange diced cucumber, halved tomatoes, and sliced red onion in sections.
- Pile the warm, crispy chickpeas in the center of the bowl.
- Drizzle the tahini dressing over the top and garnish with fresh parsley.
