Ingredients:

  • 1 cup unsalted butter, melted and slightly cooled
  • 1.5 cups granulated sugar
  • 3 large eggs, room temperature
  • 0.5 cup Dr Pepper soda, reduced by half
  • 2 tsp vanilla extract
  • 0.75 cup unsweetened cocoa powder, sifted
  • 1 cup all-purpose flour
  • 0.5 tsp salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup powdered sugar
  • 2 tbsp cocoa powder
  • 3 tbsp Dr Pepper soda
  • 1 tbsp melted butter

Instructions:

  1. Pour 1/2 cup (120ml) of Dr Pepper into a small saucepan over medium heat. Simmer until the liquid has reduced by half (approximately 1/4 cup remaining). Let cool for 5 minutes.
  2. Preheat oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.
  3. In a large bowl, whisk together melted butter and granulated sugar.
  4. Add eggs one at a time, whisking vigorously until the mixture is glossy.
  5. Stir in the reduced Dr Pepper and vanilla extract.
  6. Sift in the cocoa powder, flour, and salt; fold gently with a spatula until just combined. Fold in the chocolate chips.
  7. Pour batter into the prepared pan and bake for 28–32 minutes until edges are firm but the center remains slightly soft.
  8. Cool completely in the pan. Prepare glaze by mixing powdered sugar, cocoa powder, melted butter, and Dr Pepper soda gradually until smooth, then apply to cooled brownies.
