Ingredients:
- 1 cup unsalted butter, melted and slightly cooled
- 1.5 cups granulated sugar
- 3 large eggs, room temperature
- 0.5 cup Dr Pepper soda, reduced by half
- 2 tsp vanilla extract
- 0.75 cup unsweetened cocoa powder, sifted
- 1 cup all-purpose flour
- 0.5 tsp salt
- 1 cup semi-sweet chocolate chips
- 1 cup powdered sugar
- 2 tbsp cocoa powder
- 3 tbsp Dr Pepper soda
- 1 tbsp melted butter
Instructions:
- Pour 1/2 cup (120ml) of Dr Pepper into a small saucepan over medium heat. Simmer until the liquid has reduced by half (approximately 1/4 cup remaining). Let cool for 5 minutes.
- Preheat oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.
- In a large bowl, whisk together melted butter and granulated sugar.
- Add eggs one at a time, whisking vigorously until the mixture is glossy.
- Stir in the reduced Dr Pepper and vanilla extract.
- Sift in the cocoa powder, flour, and salt; fold gently with a spatula until just combined. Fold in the chocolate chips.
- Pour batter into the prepared pan and bake for 28–32 minutes until edges are firm but the center remains slightly soft.
- Cool completely in the pan. Prepare glaze by mixing powdered sugar, cocoa powder, melted butter, and Dr Pepper soda gradually until smooth, then apply to cooled brownies.
