Ingredients:

  • 1 box (510g) fudge brownie mix
  • 1/2 cup (120ml) Dr Pepper
  • 1/2 cup (115g) unsalted butter, melted
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 3/4 cup (130g) semi-sweet chocolate chips
  • 1/4 cup (30g) flaky sea salt
  • 1/2 cup (75g) maraschino cherries, halved

Instructions:

  1. Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large mixing bowl, whisk together the melted butter, eggs, and vanilla extract until the mixture is smooth.
  3. Stir the room temperature Dr Pepper into the butter and egg mixture.
  4. Gradually add the brownie mix, folding with a spatula until just combined. Stop as soon as flour streaks disappear to maintain a fudgy texture.
  5. Fold in the semi-sweet chocolate chips.
  6. Pour the batter into the prepared pan and smooth the top. If using, gently press the halved maraschino cherries into the surface.
  7. Bake for 30–32 minutes. The brownies are done when the edges are set and pulling away from the sides, but the center still has a slight jiggle.
  8. Remove from oven and garnish with flaky sea salt if desired.
