Ingredients:
- 115g unsalted butter, melted
- 150g coconut sugar
- 2 large eggs
- 5ml vanilla extract
- 80ml Dr Pepper soda
- 45g Dutch-processed cocoa powder
- 65g all-purpose flour
- 1.5g sea salt
- 240ml Dr Pepper soda
- 60g powdered sugar
- 14g unsalted butter
Instructions:
- Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a large bowl, whisk the melted butter (115g) and coconut sugar until smooth. Add eggs and vanilla, beating until the mixture looks glossy.
- Stir in 80ml of Dr Pepper soda.
- Sift in cocoa powder, flour, and salt. Fold gently with a spatula until just combined.
- Spread the batter evenly into the prepared pan and bake for 30-35 minutes, or until edges pull away and the center is set but soft.
- While brownies bake, simmer 240ml of Dr Pepper in a saucepan over medium heat until reduced by half (approx. 10-12 minutes).
- Whisk the powdered sugar and 14g butter into the soda reduction until smooth and syrupy.
- Pour the warm glaze over the cooled brownies, spread evenly, and let set for 15 minutes before slicing.
