Ingredients:

  • 115g unsalted butter, melted
  • 150g coconut sugar
  • 2 large eggs
  • 5ml vanilla extract
  • 80ml Dr Pepper soda
  • 45g Dutch-processed cocoa powder
  • 65g all-purpose flour
  • 1.5g sea salt
  • 240ml Dr Pepper soda
  • 60g powdered sugar
  • 14g unsalted butter

Instructions:

  1. Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, whisk the melted butter (115g) and coconut sugar until smooth. Add eggs and vanilla, beating until the mixture looks glossy.
  3. Stir in 80ml of Dr Pepper soda.
  4. Sift in cocoa powder, flour, and salt. Fold gently with a spatula until just combined.
  5. Spread the batter evenly into the prepared pan and bake for 30-35 minutes, or until edges pull away and the center is set but soft.
  6. While brownies bake, simmer 240ml of Dr Pepper in a saucepan over medium heat until reduced by half (approx. 10-12 minutes).
  7. Whisk the powdered sugar and 14g butter into the soda reduction until smooth and syrupy.
  8. Pour the warm glaze over the cooled brownies, spread evenly, and let set for 15 minutes before slicing.
