Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp (12g) baking powder
  • 1 tsp (2g) salt
  • 1 tbsp (6g) ground cinnamon
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs
  • 1/2 cup (120ml) milk
  • 1 tsp (5ml) vanilla extract
  • 3 cups (450g) fresh apples, peeled and diced
  • 1 tbsp (6g) ground cinnamon (for coating apples)
  • 1 tbsp (12g) granulated sugar (for coating apples)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or springform pan.
  2. In a large mixing bowl, whisk together the flour, 1 cup of sugar, baking powder, salt, and 1 tablespoon of cinnamon until well combined and clump-free.
  3. Create a well in the center of the dry ingredients and pour in the vegetable oil, eggs, milk, and vanilla extract. Whisk until just combined; do not overmix.
  4. In a separate small bowl, toss the diced apples with the remaining cinnamon and sugar.
  5. Gently fold the spiced apples into the batter using a rubber spatula and spread the mixture evenly into the prepared cake pan.
  6. Bake for 45–50 minutes until the top is deep mahogany-colored and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Allow the cake to cool in the pan for 10 minutes before transferring to a serving plate.
