Ingredients:
- 1.25 cups (160g) all-purpose flour
- 0.5 cup (115g) unsalted butter, chilled and cubed
- 1 tablespoon (12g) granulated sugar
- 0.5 teaspoon (3g) salt
- 4 tablespoons (60ml) ice-cold water
- 2 (6 oz / 170g each) Granny Smith apples, peeled and sliced
- 2 (6 oz / 170g each) Honeycrisp or Macintosh apples, peeled and sliced
- 3 tablespoons (36g) melted unsalted butter
- 0.25 cup (50g) light brown sugar, packed
- 1 teaspoon (2g) ground cinnamon
- 1 tablespoon (16g) cornstarch
- 1 tablespoon (15ml) lemon juice
- 1 large egg, beaten
- 1 tablespoon (8g) coarse sanding sugar
Instructions:
- In a large bowl, whisk together the all-purpose flour, granulated sugar, and salt.
- Add chilled butter cubes and use a pastry cutter or fork to work the butter into the flour until the mixture resembles coarse crumbs with pea-sized chunks.
- Stir in ice water one tablespoon at a time until the dough just begins to clump together.
- Form the dough into a flat disk, wrap in plastic, and refrigerate for 30 minutes.
- Toss sliced Granny Smith and Honeycrisp apples in a bowl with lemon juice.
- Add melted butter, brown sugar, cinnamon, and cornstarch to the apples; toss until evenly coated.
- On parchment paper, roll the chilled dough into a rough 12-inch circle.
- Pile the apple mixture into the center of the dough, leaving a 2-inch border.
- Gently fold the edges of the dough up and over the apples, pleating the crust while leaving the center open.
- Brush the folded crust with beaten egg wash and sprinkle with coarse sanding sugar.
- Slide the parchment onto a baking sheet and bake at 400°F (200°C) for 30–35 minutes until the crust is mahogany and apples are bubbling.
- Let the galette rest for 10 minutes before slicing.
