Ingredients:

  • 6 cups (1.2kg) peeled and sliced Granny Smith apples
  • 3/4 cup (150g) granulated sugar
  • 2 tbsp (16g) ground cinnamon
  • 1 tbsp (12g) lemon juice
  • 2 tbsp (16g) all-purpose flour
  • 1 package (14 oz / 400g) refrigerated ready-made pie crusts
  • 1 large egg
  • 1 tbsp (8g) coarse sugar

Instructions:

  1. Preheat the oven to 425°F (218°C). Unroll the first ready-made pastry sheet and gently press it into the bottom and sides of a 9-inch pie dish, trimming any excess dough that hangs more than an inch over the edge.
  2. In a large bowl, toss the sliced apples with lemon juice. In a small separate bowl, whisk together the granulated sugar, ground cinnamon, and all-purpose flour, then pour the mixture over the apples and toss until evenly coated.
  3. Heap the apple filling into the prepared crust, piling them slightly higher in the center. Unroll the second pastry sheet, place it over the apples, and pinch the edges of the top and bottom crusts together to seal. Cut 4-5 small slits in the center of the top crust for steam to escape.
  4. Brush the top crust with the beaten egg wash and sprinkle with coarse sugar. Bake for 40-45 minutes until the crust is deep mahogany-gold and the filling is bubbling. Let the pie cool for at least 1 hour before slicing.
