Ingredients:
- 1 lb lean ground beef (90/10)
- 8 medium flour tortillas
- 2 cups sharp cheddar cheese, freshly shredded
- 0.5 cup beef broth
Instructions:
- Preheat oven to 375°F (190°C). In a large skillet over medium-high heat, brown the ground beef until deep brown. Drain excess fat.
- Add diced onions and cook until translucent. Stir in minced garlic and taco seasoning; toast for 60 seconds.
- Deglaze the skillet with beef broth. Simmer for 5 minutes until liquid has mostly evaporated and meat is glossy.
- Grease a 9x13 inch baking dish. Place a layer of tortillas on the bottom, cutting to fit corners as needed.
- Spread half of the refried beans over the tortillas, followed by half of the seasoned beef, half the salsa, half the green chiles, and 1/3 of the cheese.
- Repeat the layers once more with remaining tortillas, beans, beef, salsa, and chiles. Top with the remaining cheese blend.
- Bake for 15-20 minutes until the cheese is bubbly and the edges are slightly golden. Garnish with fresh cilantro before serving.
