Ingredients:

  • 1 lb lean ground beef (90/10)
  • 8 medium flour tortillas
  • 2 cups sharp cheddar cheese, freshly shredded
  • 0.5 cup beef broth

Instructions:

  1. Preheat oven to 375°F (190°C). In a large skillet over medium-high heat, brown the ground beef until deep brown. Drain excess fat.
  2. Add diced onions and cook until translucent. Stir in minced garlic and taco seasoning; toast for 60 seconds.
  3. Deglaze the skillet with beef broth. Simmer for 5 minutes until liquid has mostly evaporated and meat is glossy.
  4. Grease a 9x13 inch baking dish. Place a layer of tortillas on the bottom, cutting to fit corners as needed.
  5. Spread half of the refried beans over the tortillas, followed by half of the seasoned beef, half the salsa, half the green chiles, and 1/3 of the cheese.
  6. Repeat the layers once more with remaining tortillas, beans, beef, salsa, and chiles. Top with the remaining cheese blend.
  7. Bake for 15-20 minutes until the cheese is bubbly and the edges are slightly golden. Garnish with fresh cilantro before serving.
