Ingredients:

  • 2 slices (60g) white bread
  • 1 tbsp (14g) mayonnaise
  • 2 slices (40g) sharp cheddar cheese
  • 1 slice (20g) provolone cheese (optional)

Instructions:

  1. Spread a thin, even layer of mayonnaise on one side of each bread slice, ensuring edges are covered for a uniform crunch.
  2. Place one slice, fat-side down, into a cold non-stick skillet and turn the heat to medium. Once the pan is hot, add the cheese slices immediately and top with the second slice of bread, fat-side up.
  3. Cook for approximately 3 minutes, pressing down lightly with a spatula until the bottom is deep golden brown and smells nutty, then flip the sandwich.
  4. Cook the second side for another 2-3 minutes. If cheese is not fully melted, place a lid over the pan for the final 60 seconds to trap heat. Remove when both sides are mahogany-colored and crisp.
