Ingredients:

  • 5 cups (750g) fresh peaches, peeled and sliced
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (2g) ground cinnamon
  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) salt
  • 1 cup (240ml) whole milk

Instructions:

  1. In a mixing bowl, combine sliced peaches, 1/2 cup sugar, lemon juice, and cinnamon.
  2. Let the peach mixture sit for 5-10 minutes to allow the sugar to macerate the fruit and create a syrup.
  3. Pour the melted butter directly into the bottom of a 9x9 inch baking dish, tilting to coat the surface.
  4. In a mixing bowl, whisk together flour, 1 cup sugar, baking powder, and salt.
  5. Stir in the milk until just combined, leaving a few small lumps for texture.
  6. Pour the batter directly over the melted butter in the baking dish without stirring.
  7. Carefully spoon the peach mixture over the top of the batter.
  8. Bake at 350°F (175°C) for 40-45 minutes until the topping is deep mahogany-gold and juices are bubbling.
