Ingredients:
- 1 cup (250g) Creamy Natural Peanut Butter
- 3/4 cup (150g) Coconut sugar or packed light brown sugar
- 1 Large room temperature egg
- 1 tsp Baking soda
- 1/2 tsp Sea salt
- 3/4 cup (130g) Dark chocolate chips
- 1 tsp Flaky sea salt for finishing
Instructions:
- Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
- Combine peanut butter and sugar in a large mixing bowl.
- Stir vigorously until the mixture looks smooth and the sugar is mostly incorporated.
- Add the egg, baking soda, and sea salt to the bowl.
- Mix again until the dough becomes thick and glossy. You will feel it get significantly harder to stir as the egg emulsifies with the oils.
- Fold in the chocolate chips gently using your spatula.
- Scoop the dough into 16 balls (about 2 tablespoons each) and place them 2 inches apart on the sheet.
- Press down slightly with the back of a spoon or your palm.
- Bake for 10 minutes until the edges are golden and the tops look dry.
- Cool on the sheet for at least 5 minutes until they firm up enough to move.
