Ingredients:

  • 1 cup (250g) Creamy Natural Peanut Butter
  • 3/4 cup (150g) Coconut sugar or packed light brown sugar
  • 1 Large room temperature egg
  • 1 tsp Baking soda
  • 1/2 tsp Sea salt
  • 3/4 cup (130g) Dark chocolate chips
  • 1 tsp Flaky sea salt for finishing

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. Combine peanut butter and sugar in a large mixing bowl.
  3. Stir vigorously until the mixture looks smooth and the sugar is mostly incorporated.
  4. Add the egg, baking soda, and sea salt to the bowl.
  5. Mix again until the dough becomes thick and glossy. You will feel it get significantly harder to stir as the egg emulsifies with the oils.
  6. Fold in the chocolate chips gently using your spatula.
  7. Scoop the dough into 16 balls (about 2 tablespoons each) and place them 2 inches apart on the sheet.
  8. Press down slightly with the back of a spoon or your palm.
  9. Bake for 10 minutes until the edges are golden and the tops look dry.
  10. Cool on the sheet for at least 5 minutes until they firm up enough to move.
