Ingredients:
- 12 large eggs
- 0.5 cup whole milk
- 1 tsp kosher salt
- 0.5 tsp black pepper
- 0.5 tsp garlic powder
- 12 English muffins, fork-split
- 12 slices sharp cheddar cheese
- 12 pre-cooked breakfast sausage patties
- 2 tbsp unsalted butter, softened
Instructions:
- Preheat oven to 350°F (180°C). Grease a rimmed baking sheet generously or line it with parchment.
- In a large bowl, whisk the eggs, milk, salt, pepper, and garlic powder until no streaks of yolk remain.
- Pour the egg mixture into the prepared sheet pan. Bake for 12–15 minutes until the center is set and no longer jiggles.
- Remove the eggs from the oven and let them cool completely. Once cool, use a knife or circular biscuit cutter to divide the eggs into 12 equal portions.
- Split the English muffins and spread a thin layer of softened butter on each half to act as a moisture barrier.
- Assemble the sandwiches by placing a slice of cheddar cheese on the bottom muffin half, followed by a portion of baked egg and a sausage patty.
- Place the top muffin on each sandwich. Allow the sandwiches to sit for 10 minutes before wrapping. Wrap each individual sandwich tightly in foil or parchment paper.
- Store wrapped sandwiches in airtight freezer-safe gallon bags and freeze for up to 3 months.
