Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) fine sea salt
- 3/4 cup (170g) unsalted butter, softened
- 2 large (100g) eggs, room temperature
- 1/2 cup (120ml) whole milk, room temperature
- 2 tsp (10ml) pure vanilla extract
- 3 large (450g) ripe peaches, peeled and sliced
- 2 tbsp (25g) brown sugar
- 1/2 tsp (1g) ground cinnamon
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9-inch pan with butter and line the bottom with parchment paper.
- Peel and slice peaches into uniform 1/4-inch wedges. Toss them in a small bowl with a pinch of flour to prevent sinking during baking.
- In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and fine sea salt.
- Add the softened unsalted butter and mix on low speed or with a spatula until the mixture resembles coarse sand.
- Beat in the eggs one at a time, then stir in the whole milk and vanilla extract until the batter is smooth and glossy; do not over-mix.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Arrange the peach slices in a concentric circle on top of the batter, pressing them slightly into the surface.
- Mix brown sugar and cinnamon together, then sprinkle evenly over the peaches.
- Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
