Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) fine sea salt
  • 3/4 cup (170g) unsalted butter, softened
  • 2 large (100g) eggs, room temperature
  • 1/2 cup (120ml) whole milk, room temperature
  • 2 tsp (10ml) pure vanilla extract
  • 3 large (450g) ripe peaches, peeled and sliced
  • 2 tbsp (25g) brown sugar
  • 1/2 tsp (1g) ground cinnamon

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch pan with butter and line the bottom with parchment paper.
  2. Peel and slice peaches into uniform 1/4-inch wedges. Toss them in a small bowl with a pinch of flour to prevent sinking during baking.
  3. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and fine sea salt.
  4. Add the softened unsalted butter and mix on low speed or with a spatula until the mixture resembles coarse sand.
  5. Beat in the eggs one at a time, then stir in the whole milk and vanilla extract until the batter is smooth and glossy; do not over-mix.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Arrange the peach slices in a concentric circle on top of the batter, pressing them slightly into the surface.
  8. Mix brown sugar and cinnamon together, then sprinkle evenly over the peaches.
  9. Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
