Ingredients:
- 1/2 cup (115g) unsalted butter, melted and cooled slightly
- 1 cup (200g) granulated sugar
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 1/2 cup (45g) unsweetened cocoa powder, sifted
- 1/2 cup (65g) all-purpose flour
- 1/4 cup (60ml) Dr Pepper soda, room temperature
- 1/4 tsp (1.5g) salt
- 1/2 cup (65g) powdered sugar
- 1 tbsp (15ml) cocoa powder
- 1-2 tbsp (15-30ml) Dr Pepper soda
Instructions:
- Preheat your oven to 325°F (165°C) and line an 8x8 inch pan with parchment paper using the sling method.
- Whisk the melted butter and granulated sugar together until smooth.
- Add eggs one at a time, whisking vigorously after each addition until the batter looks glossy and slightly pale, then stir in the vanilla extract.
- Sift in the cocoa powder, flour, and salt. Fold gently with a spatula until just combined.
- Slowly pour in the Dr Pepper soda. Stir until the batter is smooth and mahogany-colored, stopping as soon as the streaks of soda disappear.
- Spread the batter evenly into the prepared pan and bake for 30–35 minutes until edges are set and the center has a slight jiggle.
- Remove from oven and let cool completely in the pan on a wire rack for at least 1 hour.
