Ingredients:

  • 1/2 cup (115g) unsalted butter, melted and cooled slightly
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1/2 cup (45g) unsweetened cocoa powder, sifted
  • 1/2 cup (65g) all-purpose flour
  • 1/4 cup (60ml) Dr Pepper soda, room temperature
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (65g) powdered sugar
  • 1 tbsp (15ml) cocoa powder
  • 1-2 tbsp (15-30ml) Dr Pepper soda

Instructions:

  1. Preheat your oven to 325°F (165°C) and line an 8x8 inch pan with parchment paper using the sling method.
  2. Whisk the melted butter and granulated sugar together until smooth.
  3. Add eggs one at a time, whisking vigorously after each addition until the batter looks glossy and slightly pale, then stir in the vanilla extract.
  4. Sift in the cocoa powder, flour, and salt. Fold gently with a spatula until just combined.
  5. Slowly pour in the Dr Pepper soda. Stir until the batter is smooth and mahogany-colored, stopping as soon as the streaks of soda disappear.
  6. Spread the batter evenly into the prepared pan and bake for 30–35 minutes until edges are set and the center has a slight jiggle.
  7. Remove from oven and let cool completely in the pan on a wire rack for at least 1 hour.
