Ingredients:

  • 1 lb sirloin steak, cut into 1-inch cubes
  • 1 tsp fine sea salt
  • 1/2 tsp coarse black pepper
  • 1 tbsp avocado oil
  • 2 tbsp unsalted butter
  • 4 cloves fresh garlic, minced
  • 1 tbsp fresh parsley, finely chopped
  • 1/2 tsp red pepper flakes

Instructions:

  1. Pat the steak cubes thoroughly dry with paper towels. Note: This is the most important step for the crust.
  2. Toss the steak cubes in a bowl with 1 tsp fine sea salt and 1/2 tsp coarse black pepper until evenly coated.
  3. Set a cast iron skillet over medium high heat. Add 1 tbsp avocado oil. Wait until the oil begins to shimmer and just barely smoke.
  4. Place steak bites in the pan in a single layer. Note: If the pan is crowded, work in batches to avoid steaming.
  5. Sear the meat undisturbed for 2 minutes until a dark mahogany crust forms.
  6. Flip the bites with tongs and sear the other sides for another 2 minutes until all sides are browned.
  7. Lower the heat to medium. Add 2 tbsp unsalted butter and 4 cloves of minced garlic.
  8. Baste the steak in the melting butter for about 1 minute until the garlic is fragrant and golden.
  9. Toss in 1 tbsp fresh parsley and 1/2 tsp red pepper flakes immediately before serving.
