Ingredients:
- 1.5 lbs sirloin steak, cut into 1-inch cubes
- 2 tbsp avocado oil
- 1 tsp kosher salt
- 0.5 tsp coarse black pepper
- 4 tbsp unsalted butter, cold and cubed
- 5 cloves fresh garlic, minced
- 1 tbsp fresh parsley, finely chopped
- 0.25 tsp red pepper flakes
Instructions:
- Pat the steak cubes with paper towels until completely dry to ensure a proper sear. Season generously with kosher salt and black pepper immediately before cooking.
- Heat avocado oil in a heavy-bottomed skillet (preferably cast iron) over high heat until it begins to shimmer and smoke.
- Add the steak bites to the pan in a single layer. Sear for 2 minutes without moving them to develop a deep brown crust.
- Flip the steak bites and cook for another 2 minutes. Reduce the heat to medium-low.
- Add the cold cubed butter, minced garlic, and red pepper flakes to the pan. Stir constantly as the butter melts to create an emulsion.
- Toss the steak bites in the garlic butter for 1-2 minutes. Remove from heat, garnish with fresh parsley, and serve immediately.
