Ingredients:

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 2 tbsp avocado oil
  • 1 tsp kosher salt
  • 0.5 tsp coarse black pepper
  • 4 tbsp unsalted butter, cold and cubed
  • 5 cloves fresh garlic, minced
  • 1 tbsp fresh parsley, finely chopped
  • 0.25 tsp red pepper flakes

Instructions:

  1. Pat the steak cubes with paper towels until completely dry to ensure a proper sear. Season generously with kosher salt and black pepper immediately before cooking.
  2. Heat avocado oil in a heavy-bottomed skillet (preferably cast iron) over high heat until it begins to shimmer and smoke.
  3. Add the steak bites to the pan in a single layer. Sear for 2 minutes without moving them to develop a deep brown crust.
  4. Flip the steak bites and cook for another 2 minutes. Reduce the heat to medium-low.
  5. Add the cold cubed butter, minced garlic, and red pepper flakes to the pan. Stir constantly as the butter melts to create an emulsion.
  6. Toss the steak bites in the garlic butter for 1-2 minutes. Remove from heat, garnish with fresh parsley, and serve immediately.
