Ingredients:
- 1 cup (225g) low-sodium cottage cheese
- 2 large (100g) eggs
- 1/2 cup (65g) oat flour
- 1/2 tsp (3g) garlic powder
- 1/4 tsp (1.5g) salt
- 1/4 cup (60ml) marinara sauce
- 4 oz (115g) cooked chicken breast, diced
- 1/2 cup (55g) shredded part-skim mozzarella cheese
- 1 tbsp (15g) fresh basil, torn
Instructions:
- Place the cottage cheese, eggs, flour, garlic powder, and salt into a high-speed blender or food processor.
- Blend on high for 30–60 seconds until the mixture is completely smooth and velvety.
- Line a baking sheet with parchment paper and pour the batter into the center, spreading it into a circle or rectangle approximately 1/4 inch thick.
- Preheat your oven to 400°F (200°C) and bake the crust for 15 minutes until the edges are golden brown and the center is set.
- Spread the marinara sauce evenly across the par-baked crust.
- Distribute the diced cooked chicken breast and shredded mozzarella cheese across the top.
- Return to the oven or place under the broiler for 3–5 minutes until the cheese is bubbling and has developed small toasted spots.
- Garnish with fresh basil and optional red pepper flakes.
