Ingredients:

  • 1 cup (225g) low-sodium cottage cheese
  • 2 large (100g) eggs
  • 1/2 cup (65g) oat flour
  • 1/2 tsp (3g) garlic powder
  • 1/4 tsp (1.5g) salt
  • 1/4 cup (60ml) marinara sauce
  • 4 oz (115g) cooked chicken breast, diced
  • 1/2 cup (55g) shredded part-skim mozzarella cheese
  • 1 tbsp (15g) fresh basil, torn

Instructions:

  1. Place the cottage cheese, eggs, flour, garlic powder, and salt into a high-speed blender or food processor.
  2. Blend on high for 30–60 seconds until the mixture is completely smooth and velvety.
  3. Line a baking sheet with parchment paper and pour the batter into the center, spreading it into a circle or rectangle approximately 1/4 inch thick.
  4. Preheat your oven to 400°F (200°C) and bake the crust for 15 minutes until the edges are golden brown and the center is set.
  5. Spread the marinara sauce evenly across the par-baked crust.
  6. Distribute the diced cooked chicken breast and shredded mozzarella cheese across the top.
  7. Return to the oven or place under the broiler for 3–5 minutes until the cheese is bubbling and has developed small toasted spots.
  8. Garnish with fresh basil and optional red pepper flakes.
