Ingredients:

  • 3 lbs Granny Smith or Honeycrisp apples, peeled and sliced
  • 1/2 cup granulated sugar
  • 1 tbsp ground cinnamon
  • 1 tbsp cornstarch
  • 1/4 tsp salt
  • 1 tbsp lemon juice
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup whole milk
  • 1/2 cup unsalted butter, melted and cooled slightly

Instructions:

  1. Peel, core, and slice the apples into 1/4-inch thick wedges. In a large bowl, toss the apples with 1/2 cup granulated sugar, cinnamon, cornstarch, 1/4 tsp salt, and lemon juice until evenly coated.
  2. Transfer the apple mixture to a saucepan over medium heat. Cook for 5–8 minutes, stirring occasionally, until the apples soften and the liquid thickens into a glossy glaze. Pour the mixture into a 9x13-inch baking pan and spread evenly.
  3. In a medium bowl, whisk together the flour, baking powder, 1/2 tsp salt, and 1/2 cup granulated sugar. Stir in the milk and melted butter until a smooth, thick batter forms; do not overmix.
  4. Dollop the batter over the hot apples using a spoon, leaving small gaps so some fruit peeks through.
  5. Bake at 350°F (175°C) for 35–40 minutes until the topping is mahogany-colored and the fruit juices are bubbling vigorously.
