Ingredients:

  • 1 cup high-quality mayonnaise
  • 3 anchovy fillets, packed in oil
  • 2 cloves garlic, finely minced
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 2 tbsp fresh lemon juice
  • 0.5 cup finely grated Parmigiano-Reggiano cheese
  • 0.25 tsp kosher salt
  • 0.5 tsp freshly cracked black pepper

Instructions:

  1. On a cutting board, finely mince the anchovy fillets and garlic cloves together. Use the flat side of a chef's knife to mash them into a smooth, uniform paste.
  2. In a medium mixing bowl, combine the mayonnaise, Dijon mustard, Worcestershire sauce, fresh lemon juice, and the prepared anchovy-garlic paste.
  3. Whisk the mixture vigorously until it appears glossy and fully emulsified.
  4. Gently fold in the finely grated Parmigiano-Reggiano, kosher salt, and cracked black pepper. Taste and adjust seasoning if necessary.
