Ingredients:
- 1 cup (225g) low-fat cottage cheese
- 1 large egg
- 1/2 cup (65g) oat flour
- 1/2 tsp (3g) garlic powder
- 1/4 tsp (1.5g) salt
- 1/2 tsp (2.5g) Italian seasoning
- 1/4 cup (60ml) low-sodium marinara sauce
- 1/2 cup (56g) shredded part-skim mozzarella cheese
- 4 oz (113g) grilled chicken breast, thinly sliced
- Fresh basil leaves
- Red pepper flakes
Instructions:
- Combine the cottage cheese, egg, flour, garlic powder, salt, and Italian seasoning in a blender. Process on high until the mixture is completely smooth and velvety, with no visible curds remaining.
- Line a baking sheet with parchment paper. Pour the batter into the center and use a spatula to spread it into an even oval, roughly 1/4 inch thick.
- Bake at 400°F (200°C) for 10–12 minutes until the edges are golden-brown and the center feels firm.
- Remove the crust from the oven. Spread the marinara evenly to the edges, then layer the sliced chicken and mozzarella.
- Return to the oven for 5–7 minutes, or until the cheese is bubbly and starting to brown. Top with fresh basil and red pepper flakes before slicing.
