Ingredients:

  • 1 cup (225g) low-fat cottage cheese
  • 1 large egg
  • 1/2 cup (65g) oat flour
  • 1/2 tsp (3g) garlic powder
  • 1/4 tsp (1.5g) salt
  • 1/2 tsp (2.5g) Italian seasoning
  • 1/4 cup (60ml) low-sodium marinara sauce
  • 1/2 cup (56g) shredded part-skim mozzarella cheese
  • 4 oz (113g) grilled chicken breast, thinly sliced
  • Fresh basil leaves
  • Red pepper flakes

Instructions:

  1. Combine the cottage cheese, egg, flour, garlic powder, salt, and Italian seasoning in a blender. Process on high until the mixture is completely smooth and velvety, with no visible curds remaining.
  2. Line a baking sheet with parchment paper. Pour the batter into the center and use a spatula to spread it into an even oval, roughly 1/4 inch thick.
  3. Bake at 400°F (200°C) for 10–12 minutes until the edges are golden-brown and the center feels firm.
  4. Remove the crust from the oven. Spread the marinara evenly to the edges, then layer the sliced chicken and mozzarella.
  5. Return to the oven for 5–7 minutes, or until the cheese is bubbly and starting to brown. Top with fresh basil and red pepper flakes before slicing.
