Ingredients:
- 1 large (10 inch) flour tortilla
- 1/2 cup (125g) canned refried beans
- 1/4 tsp (1g) garlic powder
- 1/4 tsp (1g) ground cumin
- 1 tsp (5ml) lime juice
- 1/4 cup (28g) shredded Monterey Jack or Sharp Cheddar cheese
- 1 tbsp (15g) pickled jalapeños, chopped
Instructions:
- Place the refried beans in a microwave-safe bowl. Stir in the garlic powder, cumin, and lime juice. Microwave on high for 45-60 seconds until the beans are bubbling and fragrant.
- Lay the tortilla flat on a plate. Spread the heated beans in a thick strip down the center, leaving about 2 inches (5 cm) of space on the sides. Sprinkle the shredded cheese and jalapeños evenly over the top of the beans.
- Fold the sides of the tortilla inward, then roll from the bottom up, tucking the edges tightly. Wrap the entire burrito loosely in a damp paper towel.
- Microwave the wrapped burrito on high for 45-90 seconds until the tortilla is soft and the cheese is melted. Let it rest for 1 minute before eating.
