Ingredients:

  • 1 large (10 inch) flour tortilla
  • 1/2 cup (125g) canned refried beans
  • 1/4 tsp (1g) garlic powder
  • 1/4 tsp (1g) ground cumin
  • 1 tsp (5ml) lime juice
  • 1/4 cup (28g) shredded Monterey Jack or Sharp Cheddar cheese
  • 1 tbsp (15g) pickled jalapeños, chopped

Instructions:

  1. Place the refried beans in a microwave-safe bowl. Stir in the garlic powder, cumin, and lime juice. Microwave on high for 45-60 seconds until the beans are bubbling and fragrant.
  2. Lay the tortilla flat on a plate. Spread the heated beans in a thick strip down the center, leaving about 2 inches (5 cm) of space on the sides. Sprinkle the shredded cheese and jalapeños evenly over the top of the beans.
  3. Fold the sides of the tortilla inward, then roll from the bottom up, tucking the edges tightly. Wrap the entire burrito loosely in a damp paper towel.
  4. Microwave the wrapped burrito on high for 45-90 seconds until the tortilla is soft and the cheese is melted. Let it rest for 1 minute before eating.
