Ingredients:
- 1/2 cup (115g) yellow onion, finely diced
- 1 tbsp (15g) fresh ginger, minced
- 3 cloves (9g) garlic, minced
- 1 tbsp (15ml) olive oil
- 2 cups (300g) frozen mixed vegetables (peas, carrots, corn)
- 1 cup (150g) cauliflower florets, cut into small pieces
- 1 cup (150g) diced potatoes, 1/4 inch cubes
- 2 cups (150g) fresh spinach, chopped
- 1 can (400ml) full-fat coconut milk
- 2 tbsp (14g) mild curry powder
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
- 1 tsp (5ml) lime juice
Instructions:
- Place the diced onion, minced garlic, ginger, and oil in a microwave-safe glass bowl. Microwave on HIGH for 2 minutes. Stir until the onions look translucent.
- Add the potatoes, cauliflower, and frozen mixed vegetables to the bowl. Stir in the curry powder, salt, and pepper until vegetables are evenly coated. Cover with a lid and microwave on HIGH for 5 minutes.
- Pour in the coconut milk and stir in the chopped spinach. Cover and microwave on HIGH for an additional 3–4 minutes until the sauce is velvety and spinach is wilted.
- Stir in the lime juice just before serving.
