Ingredients:

  • 1/2 cup (115g) yellow onion, finely diced
  • 1 tbsp (15g) fresh ginger, minced
  • 3 cloves (9g) garlic, minced
  • 1 tbsp (15ml) olive oil
  • 2 cups (300g) frozen mixed vegetables (peas, carrots, corn)
  • 1 cup (150g) cauliflower florets, cut into small pieces
  • 1 cup (150g) diced potatoes, 1/4 inch cubes
  • 2 cups (150g) fresh spinach, chopped
  • 1 can (400ml) full-fat coconut milk
  • 2 tbsp (14g) mild curry powder
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper
  • 1 tsp (5ml) lime juice

Instructions:

  1. Place the diced onion, minced garlic, ginger, and oil in a microwave-safe glass bowl. Microwave on HIGH for 2 minutes. Stir until the onions look translucent.
  2. Add the potatoes, cauliflower, and frozen mixed vegetables to the bowl. Stir in the curry powder, salt, and pepper until vegetables are evenly coated. Cover with a lid and microwave on HIGH for 5 minutes.
  3. Pour in the coconut milk and stir in the chopped spinach. Cover and microwave on HIGH for an additional 3–4 minutes until the sauce is velvety and spinach is wilted.
  4. Stir in the lime juice just before serving.
