Ingredients:

  • 3 medium overripe bananas (370g)
  • 0.25 cup unsalted butter, melted (56g)
  • 0.25 cup canola oil (60ml)
  • 0.75 cup dark brown sugar, packed (150g)
  • 1 large egg (50g)
  • 1.5 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 0.5 teaspoon fine sea salt
  • 1.5 cups all-purpose flour (190g)

Instructions:

  1. Preheat your oven to 175°C (350°F). Line your loaf pan with parchment paper or grease it thoroughly with butter.
  2. Place 3 medium overripe bananas (370g) in a large bowl and mash with a fork until no large chunks remain and it looks liquid.
  3. Whisk in 56g of melted butter and 60ml of canola oil until the mixture looks glossy.
  4. Stir in 150g of dark brown sugar, 50g egg, and 1.5 teaspoons of vanilla until the sugar has mostly dissolved.
  5. Sprinkle 1 teaspoon of baking soda and 0.5 teaspoon of fine sea salt over the wet mixture until evenly distributed.
  6. Gently fold in 190g of all purpose flour using a spatula until just combined with no white streaks visible.
  7. Pour the mixture into the prepared pan and smooth the top with your spatula.
  8. Bake for 55 minutes until a skewer comes out with only a few moist crumbs.
  9. Let the bread sit in the pan for 10 minutes until the edges pull away slightly, then move to a wire rack.
