Ingredients:
- 3 medium overripe bananas (370g)
- 0.25 cup unsalted butter, melted (56g)
- 0.25 cup canola oil (60ml)
- 0.75 cup dark brown sugar, packed (150g)
- 1 large egg (50g)
- 1.5 teaspoons vanilla extract
- 1 teaspoon baking soda
- 0.5 teaspoon fine sea salt
- 1.5 cups all-purpose flour (190g)
Instructions:
- Preheat your oven to 175°C (350°F). Line your loaf pan with parchment paper or grease it thoroughly with butter.
- Place 3 medium overripe bananas (370g) in a large bowl and mash with a fork until no large chunks remain and it looks liquid.
- Whisk in 56g of melted butter and 60ml of canola oil until the mixture looks glossy.
- Stir in 150g of dark brown sugar, 50g egg, and 1.5 teaspoons of vanilla until the sugar has mostly dissolved.
- Sprinkle 1 teaspoon of baking soda and 0.5 teaspoon of fine sea salt over the wet mixture until evenly distributed.
- Gently fold in 190g of all purpose flour using a spatula until just combined with no white streaks visible.
- Pour the mixture into the prepared pan and smooth the top with your spatula.
- Bake for 55 minutes until a skewer comes out with only a few moist crumbs.
- Let the bread sit in the pan for 10 minutes until the edges pull away slightly, then move to a wire rack.
