Ingredients:
- 4 cups (600g) fresh peaches, peeled and sliced
- 1/4 cup (50g) brown sugar, packed
- 1 tbsp (8g) cornstarch
- 1 tbsp (15ml) lemon juice
- 1/2 tsp (1g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 1/2 cup (45g) rolled oats
- 1/4 cup (30g) all-purpose flour
- 1/4 cup (50g) brown sugar, packed
- 4 tbsp (56g) unsalted butter
- 1/4 tsp (1.5g) salt
Instructions:
- Place the sliced peaches, brown sugar, cornstarch, lemon juice, cinnamon, and salt into a large non-stick skillet.
- Turn the heat to medium and stir gently to coat the peaches.
- Simmer for 5–8 minutes, stirring occasionally, until the peaches are tender and the liquid has thickened into a glossy, velvety syrup.
- Remove the skillet from the heat and transfer the peaches to a serving bowl or individual jars.
- Wipe out the skillet with a paper towel.
- Melt the butter over medium heat until it begins to foam.
- Stir in the oats, flour, brown sugar, and salt.
- Cook, stirring constantly for 3–5 minutes, until the mixture smells nutty and turns a deep mahogany-color.
- Immediately sprinkle the hot, buttery crumble over the warm peaches.
- Press down slightly with a spoon to ensure the topping adheres to the fruit and serve immediately.
