Ingredients:

  • 4 cups (600g) fresh peaches, peeled and sliced
  • 1/4 cup (50g) brown sugar, packed
  • 1 tbsp (8g) cornstarch
  • 1 tbsp (15ml) lemon juice
  • 1/2 tsp (1g) ground cinnamon
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (45g) rolled oats
  • 1/4 cup (30g) all-purpose flour
  • 1/4 cup (50g) brown sugar, packed
  • 4 tbsp (56g) unsalted butter
  • 1/4 tsp (1.5g) salt

Instructions:

  1. Place the sliced peaches, brown sugar, cornstarch, lemon juice, cinnamon, and salt into a large non-stick skillet.
  2. Turn the heat to medium and stir gently to coat the peaches.
  3. Simmer for 5–8 minutes, stirring occasionally, until the peaches are tender and the liquid has thickened into a glossy, velvety syrup.
  4. Remove the skillet from the heat and transfer the peaches to a serving bowl or individual jars.
  5. Wipe out the skillet with a paper towel.
  6. Melt the butter over medium heat until it begins to foam.
  7. Stir in the oats, flour, brown sugar, and salt.
  8. Cook, stirring constantly for 3–5 minutes, until the mixture smells nutty and turns a deep mahogany-color.
  9. Immediately sprinkle the hot, buttery crumble over the warm peaches.
  10. Press down slightly with a spoon to ensure the topping adheres to the fruit and serve immediately.
