Ingredients:
- 1.5 cups (150g) graham cracker crumbs
- 1/3 cup (75g) melted unsalted butter
- 2 tbsp (42g) honey
- 1/4 tsp (1.5g) sea salt
- 16 oz (450g) full-fat cream cheese, chilled and cubed
- 1/2 cup (120g) plain Greek yogurt, chilled
- 1/3 cup (65g) maple syrup
- 1 tsp (5ml) pure vanilla extract
- 1 cup (240ml) heavy whipping cream, ice-cold
- 3 cups (450g) fresh peaches, peeled and diced
- 1 tbsp (15ml) lemon juice
- 1 tbsp (12g) cornstarch
- 2 tbsp (30g) maple syrup
Instructions:
- Combine graham cracker crumbs, melted butter, honey, and salt in a bowl until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of a 9-inch springform pan using the base of a glass.
- Place the crust in the freezer for 10 minutes to lock in the structure.
- In a chilled bowl, beat the cubed cream cheese until smooth and lump-free.
- Fold in the Greek yogurt, 1/3 cup maple syrup, and vanilla extract until the mixture is glossy and uniform.
- In a separate bowl, whip the ice-cold heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until combined.
- Spread the filling evenly over the chilled graham cracker crust.
- In a small saucepan, combine diced peaches, lemon juice, cornstarch, and 2 tbsp maple syrup. Simmer until thickened and peaches are tender.
- Allow the peach topping to cool completely, then spread it evenly over the cheesecake filling.
- Refrigerate the cheesecake for at least 4 hours to set completely before slicing.
