Ingredients:
- 3 oz orange-flavored gelatin
- 1 cup boiling water
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 tub (8 oz) whipped topping, thawed
- 1 can (11 oz) mandarin oranges, drained
- 1 cup mini marshmallows
Instructions:
- Whisk the orange gelatin into the boiling water. Stir constantly for 2 minutes until the granules are completely dissolved and the liquid is crystal clear.
- Set the bowl aside and allow the gelatin mixture to cool to room temperature; it should be lukewarm to the touch but still liquid.
- In a separate bowl, whisk the instant vanilla pudding mix into the cooled gelatin until the mixture thickens and becomes opaque orange.
- Gently fold in the thawed whipped topping using a rubber spatula until no white streaks remain and the mixture is a pale orange.
- Gently fold in the drained mandarin oranges and mini marshmallows.
- Transfer the mixture to a bowl or airtight glass container and refrigerate for at least 2 hours until firm and chilled.
