Ingredients:
- 2 lbs boneless skinless chicken thighs
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp cracked black pepper
- 1/4 tsp cayenne pepper
Instructions:
- Preheat your oven to 425°F (218°C). Line a large rimmed baking sheet with parchment paper or aluminum foil.
- Use paper towels to pat each chicken thigh completely dry to ensure a mahogany crust.
- In a large bowl or resealable plastic bag, whisk together the olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
- Toss the chicken thighs in the spice mixture until evenly coated.
- Arrange the thighs in a single layer on the prepared baking sheet, leaving 1 inch of space between each piece to allow air circulation.
- Roast in the center rack for 20–25 minutes, or until the internal temperature reaches 165°F (74°C).
