Ingredients:
- 1.5 cups (190g) all-purpose flour
- 0.5 cup (115g) unsalted butter, chilled and cubed
- 0.25 cup (50g) granulated sugar
- 0.25 tsp (1.5g) salt
- 2 cups (300g) sliced peaches
- 2 tbsp (25g) granulated sugar
- 0.5 tsp (1g) ground cinnamon
- 1 cup (240g) sour cream, room temperature
- 2 large (100g) eggs, room temperature
- 0.5 cup (100g) granulated sugar
- 1 tsp (5ml) vanilla extract
Instructions:
- Sift the flour, sugar, and salt into a bowl.
- Use a pastry cutter or fork to work the chilled butter into the flour until the mixture resembles coarse crumbs.
- Press the dough firmly into the bottom and 1-inch up the sides of a 9-inch springform pan.
- Bake the crust at 350°F (175°C) for 8–10 minutes until the edges are just barely set.
- In a small bowl, toss the peach slices with 2 tbsp sugar and the cinnamon.
- Arrange the peaches in overlapping concentric circles over the warm crust, packing them closely.
- Beat the room-temperature sour cream and sugar until smooth.
- Whisk in the eggs and vanilla extract until the mixture is a pale, uniform cream.
- Pour the custard evenly over the peaches and bake for 30–35 minutes until the edges are set and the center has a slight jiggle.
