Ingredients:
- 3 cups (375g) All-purpose flour
- 1/2 cup (120g) Pumpkin puree (unsweetened)
- 1/2 cup (120g) Active sourdough starter
- 1/4 cup (60ml) Warm milk
- 1/3 cup (65g) Unsalted butter, softened
- 1/4 cup (50g) Granulated sugar
- 1 tsp (6g) Kosher salt
- 1/2 cup (115g) Unsalted butter, very soft
- 3/4 cup (150g) Light brown sugar, packed
- 2 tbsp (16g) Ground cinnamon
- 1 tbsp (6g) Pumpkin pie spice
- 1/4 tsp (1.5g) Salt
- 4 oz (115g) Cream cheese, softened
- 4 tbsp (55g) Unsalted butter, softened
- 1 1/2 cups (180g) Powdered sugar
- 1 tsp (5ml) Vanilla extract
- 2 tbsp (30ml) Heavy cream
Instructions:
- In a mixer bowl, whisk together the warm milk, pumpkin puree, sourdough starter, and sugar until smooth.
- Add the flour and salt. Mix on low speed until a shaggy dough forms.
- Add the softened butter one tablespoon at a time. Knead on medium-low for 5-7 minutes until the dough is smooth and supple.
- Place dough in a greased bowl, cover, and let sit at room temperature for 2 hours, then refrigerate overnight (8-12 hours).
- Roll out the chilled dough into a rectangle on a floured surface.
- Spread the softened butter over the dough and sprinkle with brown sugar, cinnamon, pumpkin pie spice, and salt.
- Roll the dough tightly into a log and cut into 12 even pieces using dental floss for clean cuts.
- Place rolls in a greased 9x13 inch baking pan and bake for 25 minutes.
- Whisk together softened cream cheese, butter, powdered sugar, vanilla, and heavy cream until smooth; spread over warm rolls.
