Ingredients:
- 3 ½ cups (440g) All-purpose flour
- ½ cup (120g) Active sourdough starter
- ½ cup (120g) Pumpkin puree
- ¼ cup (60ml) Whole milk, warmed
- 4 tbsp (56g) Unsalted butter, softened
- 1 large Egg, room temperature
- 3 tbsp (38g) Granulated sugar
- 1 tsp (6g) Salt
- ½ tsp (2g) Baking soda
- ½ cup (113g) Unsalted butter, very soft
- ¾ cup (150g) Brown sugar, packed
- 2 tbsp (16g) Ground cinnamon
- 1 tsp (2g) Ground ginger
- ¼ tsp (1g) Ground cloves
- 4 oz (113g) Cream cheese, softened
- 4 tbsp (56g) Unsalted butter, softened
- 1 ½ cups (180g) Powdered sugar
- 1 tsp (5ml) Vanilla extract
- 2 tbsp (30ml) Heavy cream
- Pinch of salt
Instructions:
- In the bowl of a stand mixer, whisk together the active sourdough starter, warm milk, pumpkin puree, softened butter, egg, and sugar until smooth.
- Add the flour, salt, and baking soda to the wet ingredients. Mix on low speed until a shaggy dough forms.
- Increase speed to medium-low and knead for 5–7 minutes until the dough is tacky but pulls away from the sides of the bowl.
- Allow the dough to rise in a warm environment (approximately 80°F) until doubled in size.
- Roll the dough out into a rectangle on a floured surface.
- Spread the softened butter over the dough, then sprinkle evenly with brown sugar, ground cinnamon, ginger, and cloves.
- Roll the dough tightly into a log and cut into 12 equal rolls using dental floss for clean edges.
- Place rolls in a greased 9x13 inch baking pan and allow them to rise a second time.
- Bake in a preheated oven for 25-30 minutes until golden brown.
- Whisk together cream cheese, softened butter, powdered sugar, vanilla extract, heavy cream, and salt until smooth.
- Spread the frosting over the rolls while they are still slightly warm.
