Ingredients:
- 1 lb (450g) penne or rigatoni
- 1 tbsp salt (for boiling water)
- 4 tbsp (56g) unsalted butter
- 2 tbsp (30ml) extra virgin olive oil
- 4 cloves (12g) garlic, minced
- 1 cup (240ml) heavy cream
- ½ cup (50g) grated Parmesan cheese
- 1 tsp (5g) dried oregano
- ½ tsp (3g) black pepper
- ½ tsp (3g) salt
- 3 cups (450g) shredded rotisserie chicken
- ¼ cup (15g) fresh parsley, chopped
- ½ cup (120ml) reserved pasta water
Instructions:
- Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente. Note: Don't overcook, as it will soften more in the sauce.
- Scoop out about a cup of the cloudy pasta water before draining. Note: This is your insurance policy for the sauce texture.
- Place a large skillet over medium heat. Add the butter and olive oil.
- Once the butter is foamy, stir in the minced garlic. Sauté for 1-2 minutes until fragrant and pale gold.
- Pour in the heavy cream. Stir in the dried oregano, salt, and black pepper.
- Let the mixture simmer gently for 3-4 minutes until it thickens slightly.
- Whisk in the Parmesan cheese until the sauce is smooth.
- Add the shredded rotisserie chicken to the pan, stirring to coat.
- Fold in the cooked pasta and the reserved pasta water.
- Toss over medium low heat for 2 minutes until the sauce clings to the noodles. Stir in fresh parsley just before removing from heat.
