- 12 oz smoked sausage or kielbasa, sliced into 1/2-inch rounds
- 2 large bell peppers (red and yellow), de-seeded and cut into 1-inch chunks
- 1 medium zucchini, halved lengthwise and sliced into thick half-moons
- 1 small red onion, cut into 1-inch wedges
- 1 cup broccoli florets, cut small
- 2 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes
- 1/2 tsp sea salt
- 1/2 tsp coarse black pepper
Instructions:
- Preheat your oven to 400°F (200°C). Line an extra-large rimmed baking sheet with parchment paper if desired for easier cleanup.
- In a large mixing bowl, combine the sliced sausage, bell peppers, zucchini, red onion, and broccoli florets.
- Drizzle the olive oil over the mixture and add the minced garlic, dried oregano, basil, red pepper flakes, salt, and pepper.
- Toss thoroughly until every piece is evenly coated in the oil and herb emulsion.
- Spread the ingredients onto the baking sheet in a single, non-overlapping layer to ensure proper roasting rather than steaming.
- Roast for 20 minutes, tossing the ingredients halfway through the cook time, until the sausage is browned and the vegetables have charred, crispy edges.
