Ingredients:

  • 12 oz smoked sausage or kielbasa, sliced into 1/2-inch rounds
  • 2 large bell peppers (red and yellow), de-seeded and cut into 1-inch chunks
  • 1 medium zucchini, halved lengthwise and sliced into thick half-moons
  • 1 small red onion, cut into 1-inch wedges
  • 1 cup broccoli florets, cut small
  • 2 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes
  • 1/2 tsp sea salt
  • 1/2 tsp coarse black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C). Line an extra-large rimmed baking sheet with parchment paper if desired for easier cleanup.
  2. In a large mixing bowl, combine the sliced sausage, bell peppers, zucchini, red onion, and broccoli florets.
  3. Drizzle the olive oil over the mixture and add the minced garlic, dried oregano, basil, red pepper flakes, salt, and pepper.
  4. Toss thoroughly until every piece is evenly coated in the oil and herb emulsion.
  5. Spread the ingredients onto the baking sheet in a single, non-overlapping layer to ensure proper roasting rather than steaming.
  6. Roast for 20 minutes, tossing the ingredients halfway through the cook time, until the sausage is browned and the vegetables have charred, crispy edges.
