Ingredients:
- 4-5 Persian Cucumbers (approx. 350g)
- 3 Roma Tomatoes (approx. 300g), seeds removed
- 1 small Red Onion (approx. 100g), finely minced
- 1/2 cup Fresh Cilantro or Parsley, finely chopped
- 3 tbsp Fresh Lime Juice
- 1 tbsp Extra Virgin Olive Oil
- 1 tbsp Dried Mint
- 1/2 tsp Fine Sea Salt
- 1/4 tsp Cracked Black Pepper
Instructions:
- Prepare the cucumbers by slicing lengthwise into thin planks, then into matchsticks, and finally into uniform 1/4-inch cubes.
- De-seed the Roma tomatoes to prevent sogginess and dice them into cubes matching the size of the cucumbers.
- Finely mince the red onion into a small 'confetti' dice.
- Pour the lime juice and olive oil over the vegetables.
- Combine the diced cucumbers, tomatoes, and onions in a large mixing bowl. Pour the dressing over the vegetables and toss gently to ensure every piece is coated.
