Ingredients:

  • 4-5 Persian Cucumbers (approx. 350g)
  • 3 Roma Tomatoes (approx. 300g), seeds removed
  • 1 small Red Onion (approx. 100g), finely minced
  • 1/2 cup Fresh Cilantro or Parsley, finely chopped
  • 3 tbsp Fresh Lime Juice
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tbsp Dried Mint
  • 1/2 tsp Fine Sea Salt
  • 1/4 tsp Cracked Black Pepper

Instructions:

  1. Prepare the cucumbers by slicing lengthwise into thin planks, then into matchsticks, and finally into uniform 1/4-inch cubes.
  2. De-seed the Roma tomatoes to prevent sogginess and dice them into cubes matching the size of the cucumbers.
  3. Finely mince the red onion into a small 'confetti' dice.
  4. Pour the lime juice and olive oil over the vegetables.
  5. Combine the diced cucumbers, tomatoes, and onions in a large mixing bowl. Pour the dressing over the vegetables and toss gently to ensure every piece is coated.
