Ingredients:
- 1.5 lbs boneless skinless chicken thighs
- 1 tsp sea salt
- ½ tsp cracked black pepper
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ¼ tsp onion powder
- 2 tbsp avocado oil
- 2 tbsp unsalted butter
- 3 cloves garlic, smashed
- 2 sprigs fresh thyme
Instructions:
- Pat the chicken thighs completely dry with paper towels to ensure a golden-brown crust.
- Combine sea salt, black pepper, smoked paprika, garlic powder, and onion powder; sprinkle evenly over both sides of the chicken, pressing spices into the meat.
- Heat avocado oil in a 12-inch skillet over medium-high heat until shimmering and barely smoking.
- Place thighs in the pan and cook undisturbed for 5–7 minutes until a deep golden-brown crust forms.
- Flip the chicken thighs once they release easily from the pan.
- Lower heat to medium and add unsalted butter, smashed garlic, and fresh thyme to the pan.
- Tilt the pan and spoon the foaming flavored butter over the chicken for the final 3–5 minutes.
- Remove chicken from heat when the internal temperature reaches 165°F (74°C).
- Transfer to a plate and let the meat rest for 5 minutes before serving.
