Ingredients:
- 1 lb ground beef (80/20 blend)
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1/2 tsp garlic powder
- 4 large flour tortillas
- 4 slices American cheese
- 1/2 cup shredded cheddar cheese
- 1/2 cup white onion, finely diced
- 1/2 cup dill pickle chips
- 1/4 cup mayonnaise
- 1 tbsp yellow mustard
- 1 tbsp sweet pickle relish
- 1/2 tsp smoked paprika
Instructions:
- In a small mixing bowl, whisk together the mayonnaise, yellow mustard, sweet pickle relish, and smoked paprika to create the signature sauce. Set aside.
- Divide the 1 lb of ground beef into four 4-ounce balls. Keep the meat loose and do not overwork it to ensure a better sear.
- Heat a large cast iron skillet or flat top griddle over medium-high heat until very hot.
- Place one beef ball in the center of the skillet. Immediately place a flour tortilla directly on top of the beef.
- Using a heavy-duty spatula or burger press, press down firmly on the tortilla to flatten the beef into a thin layer that reaches the edges of the tortilla.
- Cook for 2-3 minutes until the beef is deeply seared and mahogany-colored. Flip the tortilla so the beef side is up.
- Immediately top the beef with one slice of American cheese and 1/4 cup of shredded cheddar. Add onions and pickles. Fold the tortilla in half and cook until the cheese is melted and the tortilla is golden brown.
